Mayer’s Green Line

For a number of years, Andreas Mayer has been concentrating on vegetarian and vegan cooking.

“Vegetarian cooking really is much more than simply “leaving out the meat & fish”. I try to compensate for the layers of flavour provided by fish and meat, which are not present in my green menus, with aromatic herbs, crunchy vegetables and aromatic sauces and essences. By doing so, dishes which are new and exciting even for me are created time and again. Vegan and vegetarian is anything but boring, it is a healthy, light and conscious way of living!”
